Typikah, French roasting meets a bright and sweet Colombian Timaná
I picked up this bag at a market in Reims, and it turned out to be the best coffee I had during my whole time there.
The coffee was roasted by Typikah, an organic and specialty coffee roaster based in France.
This bag holds a Timaná, grown in the Huila region of Colombia and produced by Cata Reserva, the small operation run by Catalina and Pierre. Some coffees you just taste, this one you live. Catalina and Pierre took over the farm from Rodrigo Cortés and now care for 30 hectares split between protected forest and agroecology. It’s a Castillo variety Arabica, grown at 2000 meters, hand picked, oxidized for 24 controlled hours, then slowly dried into a sincere, lively, and deeply human semi washed cup.
In the cup it’s all caramel and orange up front, settling into chocolate and toasted nuts. Sweet, bright, and comforting all at once, exactly what you want from a Colombian cup.
Brewed a fresh pot and poured it straight into my favorite Moomin mug. Some things just pair well together.
